The Castillo coffee we offer at Café d’Auteur is the result of a unique signature method — the “Culturing Process” — which combines tradition and scientific innovation. This exclusive process was developed in close collaboration with producers, after years of research, to reveal the full aromatic complexity and singularity of the Castillo variety. Unlike traditional fermentation methods, the Culturing Process involves highly precise injections of selected bacterial strains, carefully dosed to optimize the development of flavor and texture in the cup.
Each batch is meticulously monitored to ensure that every bean reflects the terroir, the producers’ craftsmanship, and our team’s expertise. The result is an exceptional Castillo coffee, with unique notes and an incomparable aromatic richness, perfectly illustrating the harmony between scientific innovation, roasting excellence, and respect for the land.

About the Producer
Doña Victoria comes from a family of coffee growers. She was born in Caquetá, a department heavily affected by the Colombian armed conflict. From the age of seven, her father passed on to her the love and expertise of coffee cultivation.
Due to the violence, Victoria and her family were displaced to Huila, where she continued her secondary education and met Jorge, her future husband, who is also a coffee grower.
Doña Victoria is the co-founder of an association for specialty coffee female producers. She actively participates in training other women in the region, helping them find in coffee both an economic livelihood and a sense of community.
